107 of 365. Our Daily Challenge — Starts with E.
My mother made eggs and toast like this sometimes when I was a child. She cut the center out of the bread and pan-fried it with the egg dropped into the hole. I haven’t had one of these in years, and I don’t think it is quite the same as my mother’s. I’m pretty sure she wouldn’t have had to try as many times as I did to do one without breaking the yolk.
If I had enough eggs and enough time left, I’d keep trying until I got a better shot than this. As it is…things to do, places to go.
And of course it has only just now hit me that I could have just taken a shot of a plastic Easter egg out in the yard…
